Carrabas Bread Dipping Sauce

I just found this recipe. I haven't tried it yet but was excited to share!

1 tablespoon fresh minced basil
1 tablespoon fresh minced parsley (Italian best)
1 tablespoon fresh minced garlic
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon black pepper
1/2 teaspoon minced fresh rosemary
1/2 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes
1/2 cup olive oil
1/8 teaspoon fresh lemon juice

Combine all except oil and lemon juice in a small food processor or coffee bean grinder. Chop briefly until all about the same size. Stir in olive oil and lemon juice. To serve, combine about 1 1/2 tsp. herb mixture to 3-4 Tbsp. olive oil mixture on a small dish. Dip sliced bread in mixture.

Lisa's Banana Bread

I save old bananas in the freezer until I have enough for a batch. Thaw them on the counter or in the microwave before using in the recipe. Then cut off the tops with kitchen shears and squeeze the runny bananas out of the peel.

10 ripe bananas
4 eggs
1 1/2 cups vegetable oil
3 cups sugar
2/3 cup sour cream
2 teaspoons vanilla
4 cups flour
1 1/2 teaspoon salt
2 1/2 teaspoon baking soda
2 cups chopped nuts-- wait, who cooks with nuts in the Davis family, anyway! No nuts!

Preheat oven to 325 degrees. Spray loaf pans with cooking spray and coat with granulated sugar. Combine bananas, eggs, oil, sugar, and sour cream. Add vanilla. In seperate bowl mix flour, salt, and baking soda. Combine all ingredients and mix well. Pour into loaf pans and bake until knife inserted in the center comes out clean. Six mini loaf pans bake for 55-60 minutes. Three regular loaf pans bake for 1 1/2- 2 hours. Remove bread from pans and let cool on countertop.

Lisa's Cookies

AKA- Rocky Mountain Cookies. This is the recipe that I use when I'm the one making cookies at our house. When Trevor is making cookies, he uses his own recipe.

1 cup sugar
1 cup packed brown sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups old-fashioned oats
2 cups Rice Krispies cereal (no substitutions, Kally)
1 (12-ounce) bag chocolate chips

In a large bowl cream together sugars and butter. Add eggs, vanilla and beat well. Sift dry ingredients into a seperate bowl. Add to mixture. Fold in oats, cereal, and chocolate chips. Drop by tablespoons onto a greased baking sheet. Bake at 350 degrees for 10-12 minutes or until very lightly browned. Makes 4-6 dozen, depending upon how much dough is swipped before baking!

Flaky Pie Crust

I got this from a pie class taught by Kim Morgan. The directions and measurements do need to be followed exactly.

2 c. flour
1/8 tsp. baking powder
1/2 tsp. salt
1 c. shortening
1/2 c. cold milk
1 Tbs. sugar

In a bowl, combine the flour, baking powder, salt and sugar. Cut in the shortening until mixture resembles small peas. Add cold milk and mix with a fork until dough follows fork around the bowl. The dough will be sticky, allow it to rest for 5 minutes. (Really, do this. I would be inclined to keep going. Why should dough get the chance to rest? I don't.) Roll on a floured board. Makes enough pastry for 2, 9" pie plates (with no crust on top) or 1 doubl crut pie (with crust on top.) Baking time depends on your filling. Check the filling recipe or cans for baking instructions.

Fruity Coleslaw

4 cups coleslaw mix
1 cup seedless red grapes, halved
1 apple, chopped
3/4 c. mayonnaise
1/3 c. lemon pie filling (go ahead, eat the rest!)
1 tsp. cider vinegar
1/4 tsp. celery salt
sprinkle salt
sprinkle pepper

In a large serving bowl combine coleslaw, grapes and apple. In a small bowl, combine the remaining ingredients. Pour over coleslaw and toss to coat. Chill until serving.

BBQ Chicken Chopped Salad

This one remindes me of the salad at Oregano's. Yummy!

* Thin Tortilla Strips like Nana's
* Litehouse Lite Ranch Dressing
* Sweet Baby Ray's BBQ Sauce
* 4 grilled chicken breasts cubed
* 1/2 head iceberg lettuce chopped into strips
* 1/2 head romaine lettuce chopped into strips
* 2-3 fresh basil leaves chopped fine
* 3 T cilantro finely chopped
* 2 green onions chopped
* 1 can black beans, drained & rinsed
* 1 can white corn, drained
* 2 c. shredded monterey jack cheese

Toss & coat the chicken with BBQ sauce & chill (the chicken that is). Toss together in a separate bowl the lettuces, basil, cilantro, corn, beans, & cheese. Just before serving lightly toss with Ranch & 1/2 the tortilla strips. Transfer to a serving bowl & top with chicken & remaining tortilla strips.

Cucumber Punch

I know this sounds weird but it is so refreshing & yummy! It is also green so you can use it to coordinate colors for a party! That is important you know!

Two hours before, mix:
* 1 container Crystal Light lemonade powder
* 2 quarts cold water
* 1 sliced cucumber (thin & the small english one's work best)

Serve with:
* 1 sliced lime
* 2 liters cold Sprite
* 12 oz frozen white grape juice concentrate (don't dilute)
* lots of ice

I have had some really good Ideas, but this was not one of them

So, when I was babysiting the Kriloff children at my house, I decided it would be fun to make Rice Krispie Treats together! Well, we were out of Rice Krispies (don't ask me how that happened, mom usually keeps a good stock of that stuff.) So, thinking of a solution, I found some Frosted Cheerios and thought that would be a good substitute for Rice Krispies. BOY WAS I WRONG! They did not turn out very well. Actually, they were really quite nasty.
So, I just thought I would share that mistake so that it won't happen again. There truly is no substitute for Rice Krispies if you are going to make Rice Krispie Treats.
The only thing good that came out of that little experiment was spending time with my niece and nephews. They are so much fun, and we had a blast making the gross treat! I guess that is what really counts!

Cheesecake- Light and Easy

Simple and simply delicious

8 oz. softened cream cheese (can be lowfat)
1/3 cup sugar
small size carton of cool whip (can be lowfat)

Blend all the ingredients together until smooth. Put in a graham cracker pie crust. Refigerate an hour or more before serving. Top with any fruit or just eat it plain. I love it with strawberries and Jason loves it with blueberry pie filling on top. It's our favorite dessert!!

Creamy White Chicken Chili

I know, why am I publishing a chili recipe when I can cook it outside on the sidewalk! I just saw the clouds & they reminded me of soup!

* 1 lb chicken breast, cut into ½ inch cubes (or you can use canned chicken)
* 1 medium onion, chopped
* 2 red potatoes, peeled and diced
* ½ cup celery
* 1 t garlic powder
* 1 T vegetable oil
* 2 (15oz) cans great northern beans, rinsed, and drained
* 1 (14oz) can chicken broth
* 2 (4oz) cans diced green chilies
*1t salt
* ¼ t ground cumin, rounded
* 1t dried oregano
* ½ t pepper
* 1/8 t cayenne pepper (I like all of the cayenne, but my kids like it better when I half it)
* 1 cup fat free sour cream
* ½ cup fat free half & half

Get all your ingredients ready first. In a large sauce pan, saute chicken, potatoes, celery, onion and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies and seasonings. Bring to a boil, reduce heat; simmer uncovered for 30 minutes. Remove from heat; stir in sour cream and half & half. Serve immediately. (If you already have cooked chicken, just add it right before you add the creams so it can get warm.) I got this one from my friend Melissa.

Grilled Mojo Chicken

As you all know, Sean doesn't like warm fruit. I got away with this one & he loved it!

* 1 large orange
* 3 limes
* 2 Tb fresh parsley, flat leaf, minced (I used 1 Tb dried)
* 1 Tb fresh oregano, minced
* 1 Tb fresh thyme, minced
* 3 cloves garlic, minced
* 2 tsp ground cumin
* 1/4 cup olive oil
* 1 1/2 lb skinless chicken breast
* Salt and freshly ground pepper

Grate 2 tsp zest from the orange and squeeze 1/3 cup juice. Grate 1 tsp zest from the limes and squeeze 1/4 cup juice. In a shallow glass or ceramic dish, stir together the zests and juice, and all but the last 2 ingredients. Mix well. Season the chicken generously with salt and pepper. Add chicken to marinade and turn to coat. Let stand at room temperature for 10 minutes or cover and refrigerate for up to 2 hours.
Cook on grill on medium heat. Or cook under broiler in your oven on high for 5 minutes on each side until done. I got this one from my friend Melissa.
