Grilled Mojo Chicken

As you all know, Sean doesn't like warm fruit. I got away with this one & he loved it!

* 1 large orange
* 3 limes
* 2 Tb fresh parsley, flat leaf, minced (I used 1 Tb dried)
* 1 Tb fresh oregano, minced
* 1 Tb fresh thyme, minced
* 3 cloves garlic, minced
* 2 tsp ground cumin
* 1/4 cup olive oil
* 1 1/2 lb skinless chicken breast
* Salt and freshly ground pepper

Grate 2 tsp zest from the orange and squeeze 1/3 cup juice. Grate 1 tsp zest from the limes and squeeze 1/4 cup juice. In a shallow glass or ceramic dish, stir together the zests and juice, and all but the last 2 ingredients. Mix well. Season the chicken generously with salt and pepper. Add chicken to marinade and turn to coat. Let stand at room temperature for 10 minutes or cover and refrigerate for up to 2 hours.
Cook on grill on medium heat. Or cook under broiler in your oven on high for 5 minutes on each side until done. I got this one from my friend Melissa.
